4 cups seedless watermelon, chopped into small cubes

1/2 cup fresh lime juice (about 4-5 limes)

1/4 cup honey or agave syrup (adjust based on sweetness preference)

1 teaspoon lime zest

A pinch of sea salt

Optional: Fresh mint leaves for garnish

Instructions
 

Prepare the Watermelon: Place the chopped watermelon in a blender or food processor. Blend until smooth. You may need to scrape down the sides to ensure everything is mixed.

    Mix Ingredients: Add the fresh lime juice, honey or agave syrup, lime zest, and a pinch of sea salt to the blended watermelon. Blend again until all ingredients are well incorporated.

      Taste and Adjust: Taste the mixture and adjust sweetness or acidity as needed by adding more honey/agave or lime juice.

        Prepare the Mold: Pour the watermelon-lime mixture into a greased 8x8 inch baking dish or silicone mold. You can line the dish with parchment paper for easier removal later.

          Freeze: Place the baking dish in the freezer and chill for about 4-6 hours, or until completely frozen.

            Cut and Serve: Once frozen solid, remove the dish from the freezer. If using a metal baking dish, let it sit at room temperature for a few minutes before cutting. Use a sharp knife to cut into bars or squares.

              Garnish: Optionally, garnish each bar with fresh mint leaves for a pop of color and added flavor.

                Enjoy: Serve immediately, or store leftovers in an airtight container in the freezer for up to a month.
