Ingredients

1 cup plain Greek yogurt

1 cup cream cheese, softened

1/2 cup Biscoff cookie spread

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/2 cup Biscoff cookies, crushed (plus extra for garnish)

1/4 cup milk (for consistency, if needed)

10 popsicle molds and sticks

Instructions

Prepare the Mixture: In a mixing bowl, combine the softened cream cheese and Biscoff cookie spread. Using an electric mixer, beat until smooth and creamy.

Add Yogurt: Add the Greek yogurt, powdered sugar, and vanilla extract to the bowl. Continue mixing until everything is well blended and smooth. If the mixture is too thick, gradually stir in the milk until you achieve a creamy consistency.

Fold in Cookies: Gently fold the crushed Biscoff cookies into the mixture, ensuring that they are evenly distributed.

Fill the Molds: Spoon or pour the cheesecake mixture into popsicle molds, leaving a small gap at the top to allow for expansion when freezing. Tap the molds gently on the counter to remove any air bubbles.

Insert Sticks: Place the popsicle sticks into the molds, ensuring they are centered.

Add Extra Crunch (Optional): If desired, sprinkle some additional crushed Biscoff cookies on top of the mixture before sealing the molds.

Freeze: Transfer the filled molds to the freezer. Let them freeze for at least 4-6 hours, or until completely solid.

Unmold the Pops: To remove the pops, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks to release the pops.

Serve and Enjoy: These pops can be enjoyed immediately! For extra presentation, you can drizzle some Biscoff cookie spread over the pops before serving or coat them in crushed Biscoff cookies.
