For the Mint Yogurt Layer:

2 cups plain Greek yogurt

1/3 cup honey or maple syrup (adjust for sweetness)

1 teaspoon pure peppermint extract

1-2 drops of green food coloring (optional)

For the Chocolate Layer:

1 cup Greek yogurt

1/3 cup cocoa powder

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

Pinch of salt

For Garnish:

Mini chocolate chips or crushed mint candies (optional)

Instructions
 

Prepare the Mint Yogurt Layer:

    - In a mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), peppermint extract, and optional green food coloring. Stir well until fully combined and smooth. Taste and adjust sweetness or mint flavor as desired.

      Prepare the Chocolate Layer:

        - In another bowl, mix the Greek yogurt, cocoa powder, honey (or maple syrup), vanilla extract, and a pinch of salt. Whisk until smooth and creamy. Ensure there are no lumps.

          Layering the Pops:

            - Take your pop mold and spoon a layer of the mint yogurt mixture into each section, filling about halfway. Use a spoon or spatula to smooth it out.

              - Next, gently spoon in the chocolate yogurt layer on top of the mint, filling the mold to the brim. Use a skewer or toothpick to swirl the two layers together for a marbled effect.

                Insert Sticks and Freeze:

                  - Insert the pop sticks into the molds and ensure they stay upright. Place the molds in the freezer for at least 4-6 hours or until fully frozen.

                    Unmold and Garnish:

                      - Once frozen, run warm water over the outside of the mold for a few seconds to help release the pops. Gently pull the pops out.

                        - If desired, sprinkle mini chocolate chips or crushed mint candies on the pops before serving.
