Ingredients

2 cups plain Greek yogurt (or coconut yogurt for a dairy-free option)

1/2 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

1 teaspoon peppermint extract

1/2 cup mini chocolate chips (dairy-free if needed)

1 cup dark chocolate chips (or dairy-free chocolate chips for a vegan option)

Sea salt (for garnish)

Fresh mint leaves (for garnish)

Instructions

Prepare the Yogurt Mixture:

In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and peppermint extract. Whisk until the mixture is smooth and all ingredients are well incorporated.

      Add Chocolate Chips:

Gently fold in the mini chocolate chips into the yogurt mixture until evenly distributed.

          Melt the Chocolate:

In a microwave-safe bowl, melt the dark chocolate chips in the microwave in 30-second intervals, stirring in between until completely smooth. Be careful not to burn the chocolate.

              Assemble the Cups:

Line a muffin tin with silicone or paper liners. Pour a thin layer of melted chocolate (about 1 tablespoon) into each liner. Use a spoon or brush to coat the sides of the liner with chocolate, creating a “cup” for the yogurt mixture.

                  Freeze the Chocolate Base:

Place the muffin tin in the freezer for about 10-15 minutes, or until the chocolate has hardened.

                      Fill with Yogurt Mixture:

Once the chocolate base is set, remove the muffin tin from the freezer. Spoon the yogurt mixture evenly into each chocolate cup, filling them about 3/4 of the way full.

                          Top with More Chocolate:

Drizzle or spoon the remaining melted chocolate over the yogurt-filled cups, ensuring they are sealed. This will help keep the yogurt from freezing too hard.

                              Final Freeze:

Return the muffin tin to the freezer and freeze the cups for at least 4-6 hours, or until completely frozen solid.

                                  Serve:

Once frozen, remove the cups from the muffin tin by gently peeling away the liners. Garnish with a sprinkle of sea salt and a fresh mint leaf on top.

                                      Enjoy:

Let the cups sit at room temperature for a few minutes before enjoying for the best texture. Store any leftover cups in an airtight container in the freezer.
