2 cups plain Greek yogurt

1 cup crushed pineapple (drained)

1/3 cup honey or maple syrup

1 teaspoon vanilla extract

1 cup crushed graham crackers

1/2 cup unsweetened shredded coconut

1/4 cup melted coconut oil

Fresh pineapple slices or rings for garnish

Optional: whipped cream for topping

Prepare the Base: In a mixing bowl, combine the crushed graham crackers, shredded coconut, and melted coconut oil. Mix well until all crumbs are coated in oil. This will form the crust.

    Form the Rounds: Line a muffin tin with silicone or paper liners. Press about 1 tablespoon of the graham cracker mixture into the bottom of each liner, making sure to pack it tightly. This will act as the base for your frozen yogurt rounds.

      Blend the Filling: In another bowl, mix the Greek yogurt, crushed pineapple, honey (or maple syrup), and vanilla extract until smooth and fully combined. Adjust sweetness to taste if needed.

        Fill the Cups: Spoon the yogurt mixture over the graham cracker crust in each muffin liner, filling them up to the top. Tap the tray gently on the countertop to remove any air bubbles and ensure an even fill.

          Freeze: Place the muffin tin in the freezer for at least 4 hours or until the rounds are completely solid.
