To start your Frozen Yogurt Pumpkin Spice Cups, the key lies in creating a creamy, well-blended yogurt mixture that embodies the rich flavors of autumn. Begin by selecting a high-quality yogurt; Greek yogurt is an excellent choice due to its thick consistency and higher protein content. If you prefer a lighter texture, opt for regular yogurt, but ensure it's plain to keep the focus on the pumpkin spice flavors.

Ingredients

1 cup Greek yogurt (plain or vanilla)

1 cup canned pumpkin puree

1/3 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice (plus extra for garnish)

1/4 teaspoon cinnamon

1/4 cup crushed graham crackers (for crust)

2 tablespoons melted coconut oil (or unsalted butter)

Optional toppings: Whipped cream, pecans, or chocolate drizzle

Instructions

Prepare the Crust: In a small bowl, combine the crushed graham crackers and melted coconut oil. Mix until the crumbs are evenly coated.

Create the Yogurt Mixture: In a separate bowl, whisk together the Greek yogurt, pumpkin puree, maple syrup, vanilla extract, pumpkin pie spice, and cinnamon until smooth and well-blended.

Layer the Cups: In silicone muffin cups or small plastic cups, add about a tablespoon of the graham cracker mixture and press down to form a crust. Then, spoon the pumpkin yogurt mixture on top, filling each cup to the rim.

Freeze: Place the filled cups in the freezer for at least 3 to 4 hours, or until completely set.

Serve: Once frozen, remove the cups from the freezer and let sit for a couple of minutes to soften slightly. If desired, top with whipped cream, a sprinkle of pumpkin pie spice, chopped pecans, or a drizzle of chocolate before serving.
