Ingredients
  

1 cup fresh raspberries

2 cups Greek yogurt (plain or vanilla)

1/4 cup honey or maple syrup (adjust sweetness to taste)

1 tsp vanilla extract

Pinch of salt

1 cup rolled oats

1/2 cup almond flour (or any nut flour)

1/4 cup coconut oil, melted

1/4 cup dark chocolate chips (optional)

Instructions
 

Prepare the Raspberry Puree: In a blender, combine the fresh raspberries, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend until smooth. If you prefer a chunkier texture, reserve some whole raspberries and stir them in after blending.

    Make the Cookie Base: In a large mixing bowl, combine the rolled oats, almond flour, and melted coconut oil. Stir until well combined. You can add chocolate chips into this mixture if you like.

      Shape the Cookie Coins: Using a tablespoon or a cookie scoop, drop spoonfuls of the oat mixture onto a baking sheet lined with parchment paper. Flatten each spoonful slightly to form coin shapes, about 1/2 inch thick.

        Freeze the Cookie Coins: Place the baking sheet in the freezer for about 30 minutes or until the cookie coins are firm.

          Assemble the Frozen Yogurt Coins: Once the cookie base is set, remove the baking sheet from the freezer. Spread a thin layer of the raspberry yogurt mixture on top of each cookie coin.

            Final Freeze: Return the baking sheet with the raspberry-topped cookie coins to the freezer and let them freeze for an additional 2-3 hours until the yogurt is firm.

              Serve: Once frozen, remove the cookie coins from the parchment and store them in an airtight container in the freezer. Serve cold and enjoy!
