Ingredients

1 ½ cups vanilla bean frozen yogurt (slightly softened)

1 cup all-purpose flour

½ cup granulated sugar

½ cup unsalted butter, melted

2 large eggs

1 tsp vanilla extract

1 tsp baking powder

¼ tsp salt

½ cup mini chocolate chips (optional)

¼ cup sprinkles (for decoration, optional)

Instructions

Prepare the Cake Mix: In a medium bowl, whisk together the flour, baking powder, and salt.

Mix Wet Ingredients: In a large bowl, beat the melted butter and sugar until smooth. Add the eggs and vanilla extract, mixing until well combined.

Combine Mixtures: Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix. If desired, gently fold in mini chocolate chips for an added treat.

Spread the Batter: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan. Pour the cake batter into the prepared pan, spreading it evenly with a spatula.

Bake the Base: Bake in the preheated oven for 20-25 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out clean. Allow to cool completely.

Layer with Frozen Yogurt: Once the cake base has cooled, spread the softened vanilla bean frozen yogurt evenly over the top of the cake base, smoothing it out to cover all areas.

Freeze the Bars: Place the cake in the freezer for at least 4-6 hours or until the frozen yogurt is set firmly.

Cut and Serve: Once frozen, remove the cake from the freezer and let it sit for about 5-10 minutes to soften slightly for easier cutting. Cut into bars and, if desired, sprinkle with additional sprinkles for a fun touch.

Enjoy: Serve immediately or store any leftovers back in the freezer in an airtight container!
