2 cups pineapple chunks (fresh or canned, drained)

1 cup mango, diced

1 cup kiwi, peeled and sliced

1 cup strawberries, hulled and halved

1 banana, sliced

1 cup blueberries

½ cup shredded coconut (unsweetened)

½ cup granola (your choice)

½ cup Greek yogurt (vanilla or plain)

¼ cup honey or maple syrup

1 teaspoon vanilla extract

1 tablespoon lemon juice

1 teaspoon cinnamon (optional)

Instructions
 

Prepare the Fruit: In a large mixing bowl, combine the pineapple chunks, mango, kiwi, strawberries, banana, and blueberries. Gently toss the fruit together to avoid squishing the berries.

    Make the Dressing: In a small bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice until well combined. If you like a hint of spice, add the cinnamon to the mixture.

      Combine and Layer: In a large casserole dish, layer half of the mixed fruit on the bottom. Drizzle half of the yogurt mixture over the fruit, then sprinkle half of the shredded coconut and granola on top. Repeat the layer with the remaining fruit, yogurt dressing, coconut, and granola.

        Chill: Cover the casserole with plastic wrap and refrigerate for at least 1 hour, allowing the flavors to meld and the fruit to chill.

          Serve: Remove the casserole from the refrigerator before serving. You can garnish with an additional sprinkle of coconut or a few mint leaves if desired.
