Garlic Butter Steak Tips with Mashed Potatoes

1.5 pounds sirloin steak, cut into bite-sized tips

3 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

2 pounds russet potatoes, peeled and cut into chunks

½ cup heavy cream

¼ cup milk

4 tablespoons salted butter, softened

½ teaspoon garlic powder

Salt, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: In a large pot, add the potato chunks and cover them with cold water. Add a generous pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook until the potatoes are tender, about 15-20 minutes. Drain and return to the pot.

    Make the Mashed Potatoes: Add the heavy cream, milk, softened butter, garlic powder, and salt to the drained potatoes. Mash until smooth and creamy. Adjust seasoning to taste. Keep warm.

      Cook the Steak Tips: In a large skillet, heat the olive oil over medium-high heat. Season the steak tips with salt and pepper. Add the steak tips to the skillet and sear for about 3-4 minutes, stirring occasionally, until browned on all sides and cooked to your desired doneness. Remove the steak tips from the skillet and set aside.

        Prepare the Garlic Butter Sauce: In the same skillet, reduce the heat to medium. Add 2 tablespoons of butter and let it melt. Add the minced garlic, chopped rosemary, and thyme. Sauté for about 1-2 minutes until fragrant, stirring often to prevent burning.

          Combine Steak and Sauce: Return the steak tips to the skillet. Toss the tips in the garlic herb butter, coating them well. Cook for an additional 1-2 minutes to heat through.

            Serve: Plate the creamy mashed potatoes and top with the flavorful garlic butter steak tips. Drizzle any remaining garlic butter sauce from the skillet over the top. Garnish with fresh parsley for a pop of color.
