For the Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (preferably panko)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

For the Garlic Butter Sauce:

1/4 cup unsalted butter

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1/2 teaspoon red pepper flakes (optional)

For Assembling:

4 sub rolls

1 cup marinara sauce

1 cup shredded mozzarella cheese

Additional chopped parsley for garnish (optional)

Instructions
 

Prepare the Meatballs:

    - In a large bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, minced garlic, egg, oregano, onion powder, salt, and black pepper. Mix gently until everything is combined but do not overmix.

      Shape the Meatballs:

        - Preheat your oven to 400°F (200°C). Using your hands, shape the mixture into meatballs about 1-1.5 inches in diameter and place them on a lined baking sheet.

          Bake the Meatballs:

            - Bake the meatballs for 20-25 minutes, or until they are cooked through and golden brown.

              Make the Garlic Butter Sauce:

                - While the meatballs bake, melt the butter in a small saucepan over medium heat. Add the minced garlic, sauté for about 1 minute until fragrant, then stir in the parsley and red pepper flakes (if using). Remove from heat.

                  Assemble the Subs:

                    - In a small saucepan, warm the marinara sauce over low heat. Slice the sub rolls open without cutting all the way through, then place them on a baking sheet.

                      - Spoon a layer of marinara sauce into each roll, followed by 3-4 turkey meatballs, drizzle with garlic butter sauce, and top with shredded mozzarella cheese.

                        Bake the Subs:

                          - Place the assembled subs in the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.

                            Serve:

                              - Remove from the oven, garnish with extra parsley if desired, and serve hot.
