Garlic Herb Roasted Pork Tenderloin

1.5 pounds pork tenderloin

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

2 tablespoons olive oil

1 teaspoon Dijon mustard

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for a kick)

1 lemon, zested and juiced

1 cup low-sodium chicken broth

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Marinade: In a small bowl, mix the minced garlic, rosemary, thyme, parsley, olive oil, Dijon mustard, salt, black pepper, red pepper flakes, lemon zest, and lemon juice together until well combined.

      Marinate the Pork: Pat the pork tenderloin dry with paper towels. Rub the marinade all over the pork, ensuring it’s evenly coated. For best results, allow the pork to marinate for at least 30 minutes at room temperature or longer in the refrigerator (up to 4 hours).

        Sear the Pork: In an oven-safe skillet (cast iron works great), heat a tablespoon of olive oil over medium-high heat. Once hot, add the marinated pork tenderloin and sear on all sides until golden brown, about 2-3 minutes per side.

          Add Chicken Broth: Pour the chicken broth into the skillet around the pork, which will help keep it moist during roasting.

            Roast in Oven: Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 145°F (63°C). The pork should be slightly pink in the center.

              Rest the Pork: Remove the skillet from the oven, and cover the pork tenderloin with foil to rest for 10 minutes. This allows the juices to redistribute, making for a juicier tenderloin.

                Slice and Serve: After resting, slice the pork tenderloin into medallions. Serve drizzled with some of the pan juices and a sprinkle of fresh herbs for garnish.
