1 (8.5 oz) box cornbread mix

1 cup shredded sharp cheddar cheese

1 cup whole milk

2 large eggs

1 cup creamed corn

1 cup whole kernel corn (drained)

1/2 cup diced green bell pepper

1/2 cup diced onion

1/4 cup unsalted butter, melted

1 tablespoon honey (optional)

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

Fresh chives, for garnish (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare Baking Dish: Grease a 9x13 inch baking dish or casserole pan with cooking spray or a little melted butter.

      Mix Wet Ingredients: In a large mixing bowl, combine the whole milk, melted butter, honey, and eggs. Whisk until well blended.

        Add Corn and Cheese: Stir in the creamed corn, whole kernel corn, bell pepper, onion, and half of the cheddar cheese (reserve the other half for topping later).

          Combine Dry Ingredients: In a separate bowl, mix the cornbread mix, baking powder, salt, black pepper, and garlic powder.

            Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; some lumps are okay!

              Transfer to Dish: Pour the cornbread batter into the prepared baking dish, spreading it evenly.

                Top with Cheese: Sprinkle the remaining cheddar cheese over the top of the batter.

                  Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
