2 cups fresh cherries, pitted and halved

1 tablespoon olive oil

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon lime juice

8 small corn tortillas

1 cup crumbled feta cheese (or dairy-free alternative)

1/2 cup fresh mint leaves, chopped

1 avocado, sliced

1/4 cup sour cream or Greek yogurt (optional)

Instructions
 

Prepare the Cherries: In a bowl, combine the halved cherries, olive oil, honey, lime juice, and a pinch of salt and pepper. Toss gently to coat the cherries evenly.
