Grilled Chicken and Mango Salsa Wraps

Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper to taste

4 whole wheat tortillas

1 ripe mango, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 avocado, sliced (for garnish)

Greek yogurt or sour cream (for serving, optional)

Instructions
 

Marinate the Chicken:

    In a bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and pepper. Add the chicken breasts and coat well with the marinade. Allow to marinate for at least 30 minutes (or up to 2 hours in the fridge).

      Make the Mango Salsa:

        In another bowl, mix together the diced mango, red onion, red bell pepper, jalapeño (if using), and cilantro. Drizzle with lime juice, and season with salt to taste. Stir gently to combine and set aside.

          Grill the Chicken:

            Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken breasts. Grill for about 6-7 minutes on each side, or until fully cooked (internal temperature reaches 165°F/74°C). Remove from the grill and let them rest for a few minutes before slicing.

              Assemble the Wraps:

                Warm the whole wheat tortillas on the grill for about 30 seconds on each side. Once warm, place sliced grilled chicken in the center of each tortilla. Top generously with mango salsa and add a few slices of avocado.

                  Wrap it Up:

                    Fold in the sides of the tortilla, then roll it tightly from the bottom to create a wrap.

                      Serve:

                        Cut the wraps in half, and serve with a dollop of Greek yogurt or sour cream if desired.
