Grilled Chicken Greek Salad

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

4 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, chopped

1/4 red onion, thinly sliced

1/2 cup Kalamata olives, pitted

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1 lemon, juiced

1 tablespoon red wine vinegar

Instructions
 

Marinate the Chicken: In a bowl, combine olive oil, dried oregano, salt, and pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

    Preheat Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop over medium-high heat.

      Grill Chicken: Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest for 5 minutes before slicing it into strips.
