Grilled Chicken & Peach Skewers

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into chunks

1 red onion, cut into wedges

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Prepare the Marinade: In a bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, thyme, salt, and pepper. This will be your marinade for the chicken.
