Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

3 tablespoons olive oil

3 tablespoons balsamic vinegar

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

For the Skewers:

2 large ripe peaches, pitted and cut into wedges

1 red bell pepper, cut into 1-inch pieces

1 small red onion, cut into wedges

Fresh basil leaves (for garnish)

Optional Glaze:

2 tablespoons honey

1 tablespoon balsamic vinegar

Instructions

Marinate the Chicken:

    - In a bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, dried thyme, salt, and pepper. Add the cubed chicken and mix until thoroughly coated. Cover and refrigerate for at least 30 minutes to 2 hours for maximum flavor.

      Prepare the Skewers:

        - If using wooden skewers, soak them in water for about 30 minutes to prevent burning.

          - Once the chicken has marinated, take skewers and begin threading on the chicken pieces, alternating with chunks of peach, bell pepper, and red onion. Aim for about 3-4 pieces of chicken per skewer, interspersed with the veggies and fruit.

            Preheat the Grill:

              - Preheat your grill to medium-high heat (about 400°F). Lightly oil the grill grates to prevent sticking.

                Grill the Skewers:

                  - Place the skewers on the grill. Cook for 6-8 minutes per side, turning occasionally to ensure even cooking. The chicken should reach an internal temperature of 165°F and the peaches should be slightly caramelized.

                    Optional Glaze:

                      - While the skewers are grilling, mix honey and balsamic vinegar in a small bowl. Brush the glaze on the skewers in the last couple of minutes of grilling for added flavor.

                        Garnish and Serve:

                          - Remove the skewers from the grill and allow them to rest for a few minutes. Then, garnish with fresh basil leaves before serving.

                            Enjoy:

                              - Serve warm and enjoy the delicious combination of grilled chicken and caramelized peaches!
