Grilled Halloumi and Peach Skewers

1 block (250g) Halloumi cheese, cut into 1-inch cubes

2 ripe peaches, pitted and cut into wedges

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

Skewers (wooden or metal; if using wooden, soak in water for 30 minutes)

Instructions
 

Marinate the Halloumi: In a bowl, mix the olive oil, honey, thyme, salt, and pepper. Add the Halloumi cubes and gently toss to coat. Let marinate for 15 minutes to absorb flavors.

    Prepare the Skewers: While the Halloumi marinates, thread the peach wedges and Halloumi cubes onto the skewers, alternating between the two. Aim for 3-4 pieces of each per skewer.

      Preheat the Grill: Heat your grill or grill pan over medium-high heat until it's hot and ready.

        Grill the Skewers: Place the skewers on the grill. Cook for about 3-4 minutes on each side until the Halloumi is golden brown and the peaches are soft with grill marks. Watch carefully to avoid burning.

          Serve: Remove from the grill and transfer to a serving platter. Drizzle any leftover marinade over the skewers for added flavor.
