2 medium zucchini, sliced into 1/2-inch thick rounds

8 ounces halloumi cheese, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1/4 cup extra virgin olive oil

2 tablespoons lemon juice

2 teaspoons dried oregano

1 teaspoon garlic powder

Salt and fresh black pepper, to taste

Fresh parsley or mint, for garnish

Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Make the Marinade: In a large bowl, whisk together the olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper.

      Marinate the Ingredients: Add the zucchini, halloumi cubes, and bell peppers to the marinade. Toss gently to coat all the ingredients evenly. Let them marinate for about 20 minutes at room temperature.
