Ingredients

1 cup natural peanut butter (smooth or crunchy)

1/2 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1 cup rolled oats (gluten-free if needed)

1/2 cup almond flour (or any nut flour)

1/4 teaspoon salt

1 teaspoon vanilla extract

1/2 cup dark chocolate chips (dairy-free for a vegan option)

2 tablespoons coconut oil (optional for melting chocolate)

Instructions

Prepare the Base: In a large mixing bowl, combine the natural peanut butter and honey (or maple syrup). Mix well until the ingredients are fully blended and smooth.

Add Dry Ingredients: Next, sift in the unsweetened cocoa powder, rolled oats, almond flour, and salt into the peanut butter mixture. Pour in the vanilla extract. Stir everything together until thoroughly combined. The mixture should be thick and slightly sticky.

Press into Pan: Line an 8x8-inch baking dish with parchment paper, ensuring the paper hangs over the sides for easy removal. Transfer the mixture to the lined dish and press it down evenly using the back of a spatula or your hands. Make sure it’s well-compacted.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until the chocolate is smooth and melted.

Spread the Chocolate: Pour the melted chocolate over the pressed peanut butter mixture in the baking dish. Use a spatula to spread the chocolate evenly across the top.

Chill to Set: Place the baking dish in the refrigerator for at least 2 hours to allow the bars to firm up. This will make slicing them much easier.

Cut into Bars: Once set, lift the bars out of the dish using the edges of the parchment paper. Place on a cutting board and slice into squares or rectangles, according to your preferred size.

Storage: Store the bars in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage. Enjoy guilt-free!
