Ingredients

1 pre-made pizza crust (store-bought or homemade)

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

3 large eggs

1 cup Hatch green chilies, roasted and diced (fresh or canned)

1/2 cup cooked breakfast sausage, crumbled (optional)

1/4 cup diced red onion

1/4 cup chopped fresh cilantro

1/2 teaspoon garlic powder

Salt and pepper to taste

Olive oil, for drizzling

Instructions

Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking.

Prepare the Pizza Base: If using a homemade pizza crust, roll it out to your desired thickness and place it on a lightly greased baking sheet or pizza stone. If using a store-bought crust, follow the package instructions for prep.

Cheese Layer: Sprinkle the shredded mozzarella cheese evenly over the pizza crust, creating a layer for the toppings to adhere.

Add the Ingredients: Sprinkle the shredded cheddar cheese over the mozzarella layer. Evenly distribute the diced Hatch green chilies, cooked breakfast sausage (if using), and diced red onion on top of the cheese.

Prepare the Eggs: In a bowl, whisk the eggs with the garlic powder, salt, and pepper until well combined. Then, using a spoon, carefully make small wells in the toppings and gently crack the eggs into each well.

Bake the Pizza: Drizzle a bit of olive oil over the top of the pizza to enhance flavor and help with browning. Place the pizza in the oven and bake for 15-20 minutes or until the cheese is bubbly and the egg whites are set.

Garnish: Once out of the oven, allow it to cool slightly. Top with fresh chopped cilantro for a burst of flavor and color.

Slice and Serve: Cut the pizza into slices and serve warm, perhaps with extra Hatch chilies or hot sauce on the side for those who like it spicy.
