Hatch Chili Cheesy Corn Nachos

Ingredients
  

1 bag of tortilla chips (about 12 ounces)

2 cups shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup hatch green chiles, roasted and chopped (or canned)

1/2 cup diced red onion

1/2 cup black olives, sliced

1 ripe avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup sour cream

1/4 cup salsa (your favorite kind)

1 tablespoon lime juice

Jalapeño slices (optional, for added heat)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Cheese Mixture: In a bowl, combine the shredded cheddar and Monterey Jack cheeses with the chopped hatch green chiles. Stir until well incorporated.

      Layer the Nachos: On a large baking sheet or oven-safe platter, spread out the tortilla chips in an even layer. Sprinkle about half of the cheese mixture over the chips, followed by the diced red onion, black olives, and any desired jalapeño slices.

        Add More Layers: Add the remaining tortilla chips on top of the first layer, and then top with the rest of the cheese mixture to ensure the nachos are cheesy throughout.

          Bake: Place the nachos in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.

            Prepare Avocado and Sour Cream Topping: While the nachos are baking, in a small bowl, mix the diced avocado with lime juice, salt, and pepper to taste. This will prevent the avocado from browning.

              Remove from Oven: Once the nachos are done baking, carefully remove them from the oven. Top with the prepared avocado mixture, fresh cilantro, and dollops of sour cream.

                Serve with Salsa: Drizzle the salsa over the top, or serve it on the side for dipping.

                  Enjoy: Serve immediately while hot with a side of drinks of your choice.
