2 cups cooked and shredded chicken

1 cup roasted Hatch green chilies, diced (fresh or canned)

1 cup shredded Monterey Jack cheese

1 cup black beans, drained and rinsed

½ cup sour cream

¼ cup fresh cilantro, chopped

2 teaspoons cumin

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

1 tablespoon olive oil

Lime wedges, for serving

Prepare the Filling:

    In a large mixing bowl, combine the cooked shredded chicken, diced roasted Hatch green chilies, Monterey Jack cheese, black beans, sour cream, cilantro, cumin, garlic powder, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated.

      Assemble the Burritos:

        Lay a tortilla flat on a clean surface. Spoon a generous amount of the filling onto the center of the tortilla, making sure not to overfill. Fold in the sides and roll the tortilla tightly from the bottom up to form a burrito. Repeat this for all tortillas.

          Heat the Pan:

            In a large skillet, heat the olive oil over medium heat. Make sure the oil is hot but not smoking.

              Cook the Burrito Melts:

                Place the burritos seam-side down in the skillet. Cook for about 3-4 minutes on each side, or until they are golden brown and crispy, and the cheese inside is melted. You may need to do this in batches if your skillet is not large enough.

                  Serve:

                    Once cooked, remove the burritos from the skillet and let them rest for a minute. Cut them in half on a diagonal to reveal the delicious filling inside. Serve warm with lime wedges on the side for squeezing over the burritos.
