Honey Garlic Shrimp and Broccoli Stir-Fry

1 pound large shrimp, peeled and deveined

2 cups broccoli florets

2 tablespoons vegetable oil

4 cloves garlic, minced

1 teaspoon fresh ginger, minced

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch

2 tablespoons water

Sesame seeds for garnish

Green onions, chopped, for garnish

Cooked jasmine rice or noodles, for serving

Instructions
 

Prepare the Sauce: In a small bowl, whisk together honey, soy sauce, rice vinegar, cornstarch, and water until smooth. Set aside.

    Blanch the Broccoli: Bring a pot of lightly salted water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and plunge into ice water to stop the cooking process. Set aside.

      Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp in a single layer and cook for about 2-3 minutes, turning occasionally, until they are pink and opaque. Remove the shrimp from the skillet and set aside.

        Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the minced garlic and ginger for about 30 seconds until fragrant, being careful not to let them burn.

          Combine Ingredients: Add the blanched broccoli back into the skillet, stirring to combine. Then pour in the honey sauce, stirring continuously until it thickens slightly. This should take about 1-2 minutes.

            Add Shrimp: Return the cooked shrimp to the skillet, tossing everything together until the shrimp are well-coated in the sauce. Cook for an additional 1-2 minutes until heated through.

              Serve: Remove from heat and garnish with sesame seeds and chopped green onions. Serve the stir-fry over cooked jasmine rice or noodles for a complete meal.
