Honey Garlic Shrimp Stir Fry

Ingredients
  

1 pound large shrimp, peeled and deveined

3 tablespoons honey

3 tablespoons soy sauce (low-sodium)

2 tablespoons sesame oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

1 medium carrot, julienned

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (optional, for garnish)

Salt and pepper to taste

Cooked jasmine or brown rice (for serving)

Instructions
 

Prep the Sauce: In a small bowl, mix together honey, soy sauce, minced garlic, and grated ginger. Set aside.

    Heat the Pan: In a large skillet or wok, heat the sesame oil over medium-high heat.

      Cook the Shrimp: Add the shrimp to the hot skillet, season with salt and pepper, and cook for about 2-3 minutes on each side until they are pink and opaque. Remove the shrimp from the skillet and set aside.

        Stir Fry the Veggies: In the same skillet, add the sliced red bell pepper, broccoli florets, snap peas, and julienned carrots. Stir fry the vegetables for about 4-5 minutes, or until they are tender-crisp.

          Combine Everything: Return the shrimp to the skillet with the vegetables. Pour the honey garlic sauce over the shrimp and vegetables. Toss everything together, allowing the sauce to coat evenly for about 2 minutes.

            Garnish and Serve: Remove from heat. Garnish with sliced green onions and sesame seeds if using. Serve the honey garlic shrimp stir fry over cooked rice.
