Honey Garlic Shrimp with Broccoli Rice

For the Honey Garlic Shrimp:

1 lb (450g) large shrimp, peeled and deveined

1/4 cup honey

4 cloves garlic, minced

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 tablespoon fresh ginger, grated

2 tablespoons olive oil

Salt and pepper to taste

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

For the Broccoli Rice:

2 cups fresh broccoli florets

1 tablespoon olive oil

1 clove garlic, minced

Salt and pepper to taste

1 tablespoon lemon juice

Instructions
 

Prepare the Broccoli Rice:

    - In a food processor, pulse the broccoli florets until they resemble rice grains. Be careful not to over-process; you want a fluffy texture.

      Cook the Broccoli Rice:

        - In a large pan, heat 1 tablespoon of olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.

          - Add the broccoli rice to the pan. Sauté for 4–5 minutes, stirring often, until bright green and tender. Season with salt, pepper, and lemon juice. Remove from heat and set aside.

            Make the Honey Garlic Sauce:

              - In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, and grated ginger. Set aside.

                Cook the Shrimp:

                  - In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once the oil is hot, add the shrimp, seasoning them lightly with salt and pepper. Cook for 2–3 minutes on one side until they turn pink.

                    - Flip the shrimp and pour in the honey garlic sauce. Cook for another 2–3 minutes, stirring frequently, until the shrimp are fully cooked, and the sauce has thickened slightly.

                      Combine and Serve:

                        - On a serving plate, create a bed of the broccoli rice. Top with the honey garlic shrimp, and drizzle any remaining sauce from the skillet over the shrimp.

                          - Garnish with sesame seeds and sliced green onions for added flavor and crunch.
