Honey Mustard Glazed Salmon with Roasted Asparagus

For the Honey Mustard Glazed Salmon:

4 salmon fillets (approximately 6 oz each)

3 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

1 teaspoon fresh lemon juice

Zest of 1 lemon

Fresh dill, for garnish (optional)

For the Roasted Asparagus:

1 pound asparagus, trimmed

2 tablespoons olive oil

Salt and pepper to taste

1 tablespoon lemon juice

1 teaspoon garlic powder

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Glaze: In a small bowl, whisk together the honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, salt, pepper, lemon juice, and lemon zest until well combined. Set aside.

      Prepare the Asparagus: In a large mixing bowl, toss the trimmed asparagus with olive oil, salt, pepper, lemon juice, and garlic powder until evenly coated.

        Arrange on Baking Sheet: Line a baking sheet with parchment paper or aluminum foil for easy cleanup. Lay the asparagus spears in a single layer on one side of the baking sheet.

          Add Salmon: Place the salmon fillets next to the asparagus on the same baking sheet. Generously brush the honey mustard glaze over the top of each salmon fillet.

            Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the salmon flakes easily with a fork and the asparagus is tender and slightly crisp.

              Broil for Extra Flavor (Optional): For a bit of caramelization, turn on the broiler for the last 2-3 minutes of cooking. Keep an eye on it to prevent burning.

                Serve: Once done, remove from the oven and let it rest for a minute. Serve the salmon topped with additional glaze if desired, and garnish with fresh dill. Serve the roasted asparagus on the side.
