Honey Roasted Apple and Carrot Slaw

2 medium apples (preferably Honeycrisp or Fuji), cored and julienned

2 large carrots, peeled and grated

1 cup red cabbage, finely shredded

1/4 cup walnuts, roughly chopped

1/4 cup raisins or cranberries

3 tablespoons honey

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1/4 cup olive oil

Salt and pepper, to taste

Fresh parsley, chopped for garnish

Instructions
 

Preheat the Oven: Set your oven to 350°F (175°C).

    Roast the Apples: Toss the julienned apples with 1 tablespoon of honey and a pinch of salt. Spread them on a baking sheet lined with parchment paper and roast for about 15-20 minutes, until they are slightly soft and caramelized. Stir halfway through for even roasting.

      Prepare the Slaw Base: In a large bowl, combine the grated carrots, shredded red cabbage, chopped walnuts, and raisins or cranberries.

        Make the Dressing: In a small bowl, whisk together the remaining honey, apple cider vinegar, Dijon mustard, olive oil, and a pinch of salt and pepper until well combined.

          Combine Ingredients: Once the apples are done roasting, allow them to cool slightly before adding them to the slaw base. Drizzle the dressing over the slaw and gently toss to combine everything evenly.

            Chill and Serve: Allow the slaw to chill in the refrigerator for at least 30 minutes to meld the flavors. Before serving, garnish with fresh parsley for an extra pop of color and freshness.
