2 cups cooked white rice (or brown rice for a healthier option)

2 cups fresh broccoli florets (you can also use frozen)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup cream of mushroom soup (or cream of chicken soup)

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional for a little kick)

1/2 cup breadcrumbs (for a crunch topping)

1 tablespoon olive oil or melted butter (for breadcrumbs)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Broccoli: If using fresh broccoli, steam the florets for about 5-7 minutes until they are tender but still bright green. If using frozen, just thaw them in the microwave.

      Combine Ingredients: In a large mixing bowl, combine the cooked rice, steamed broccoli, 1 cup of shredded cheddar cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, pepper, and paprika. Mix until everything is well combined.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13-inch casserole dish, spreading it evenly.

          Prepare the Topping: In a small bowl, mix the breadcrumbs with the olive oil or melted butter. Stir until the breadcrumbs are evenly coated. Sprinkle this mixture over the casserole for a crunchy topping.

            Add Extra Cheese: Top the casserole with the extra shredded cheddar for added cheesiness.
