Ingredients
  

1 cup couscous

1 ¼ cups boiling water

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper, diced (any color)

½ red onion, finely chopped

1 cup fresh basil leaves, chopped

1/2 cup feta cheese, crumbled

1/4 cup olive oil

1/4 cup fresh lemon juice

Zest of 1 lemon

Salt and pepper to taste

Cook the Couscous: In a large bowl, combine the couscous and boiling water. Cover with plastic wrap or a lid and let it sit for about 5 minutes until the liquid is absorbed. Fluff the couscous with a fork and set it aside to cool.

    Prepare the Vegetables: While the couscous is cooling, wash and chop the cherry tomatoes, cucumber, bell pepper, and red onion. Place them in a large mixing bowl.

      Add the Basil and Feta: Once the couscous has cooled, add it to the mixing bowl with the vegetables. Then, fold in the chopped basil and crumbled feta cheese gently.
