Lemon Garlic Chicken Meatball Subs

Ingredients
  

For the Chicken Meatballs:

1 pound ground chicken

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

Zest of 1 lemon

2 tablespoons lemon juice

1/4 cup fresh parsley, finely chopped

1 egg, lightly beaten

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

For the Lemon Garlic Sauce:

3 tablespoons olive oil

3 cloves garlic, minced

1/2 cup chicken broth

2 tablespoons lemon juice

1 teaspoon lemon zest

Salt and black pepper to taste

For Assembly:

4 sub rolls or hoagie buns

1 cup fresh arugula or spinach

1/2 cup sliced fresh tomatoes

Fresh parsley for garnish (optional)

Lemon wedges for serving

Prepare the Meatballs:

    In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, lemon zest, lemon juice, chopped parsley, beaten egg, salt, black pepper, and red pepper flakes. Mix thoroughly until all ingredients are well combined.

      Form and Bake:

        Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Using your hands, form the chicken mixture into meatballs about 1 inch in diameter and place them on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown and cooked through (internal temperature of 165°F/74°C).

          Make the Lemon Garlic Sauce:

            While the meatballs are baking, heat the olive oil in a saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Pour in the chicken broth, lemon juice, and lemon zest. Bring to a simmer and season with salt and black pepper to taste. Let it simmer for about 5 minutes to slightly thicken.

              Assemble the Subs:

                Once the meatballs are cooked, warm your sub rolls in the oven for a few minutes if desired. Layer the arugula or spinach on the bottom of each roll, followed by 3-4 meatballs per sub. Drizzle generously with the lemon garlic sauce and add a few slices of fresh tomatoes. Garnish with additional parsley if desired.

                  Serve:
