Lemon Parmesan Chicken Pasta Bake

2 cups cooked pasta (penne or fusilli work well)

2 chicken breasts, cooked and shredded

1 cup broccoli florets, steamed

1 cup cherry tomatoes, halved

2 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 cup heavy cream

1 cup grated Parmesan cheese (plus extra for topping)

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

1/2 cup breadcrumbs (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the cooked pasta, shredded chicken, steamed broccoli, and cherry tomatoes.

      In a skillet over medium heat, heat the olive oil. Add minced garlic and sauté for about 1 minute until fragrant.

        In the skillet, add lemon zest, lemon juice, heavy cream, and Italian herbs. Stir until well combined and let it simmer for about 2-3 minutes.

          Add 1 cup of grated Parmesan cheese to the sauce, stirring until it melts and creates a creamy mixture. Season with salt and pepper to taste.

            Pour the creamy lemon sauce over the pasta mixture and toss to coat everything evenly.

              Transfer the mixture into a greased 9x13-inch baking dish.

                In a small bowl, mix breadcrumbs with 1/4 cup of grated Parmesan cheese. Sprinkle this mixture evenly over the pasta bake.

                  Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and bubbly.

                    Remove from the oven and let it sit for 5 minutes before serving.

                      Garnish with fresh parsley and an additional sprinkle of Parmesan cheese if desired.
