8 oz (225g) pasta (penne or fusilli)

2 medium zucchinis, thinly sliced

1 cup cherry tomatoes, halved

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

Zest and juice of 1 large lemon

2 cloves garlic, minced

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves for garnish

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

      Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about 1 minute until fragrant. Add the sliced zucchinis and cherry tomatoes to the skillet, seasoning with salt, pepper, oregano, and red pepper flakes. Cook for about 5-7 minutes until the vegetables are tender but still vibrant.

        Mix the cheese: In a large mixing bowl, combine the ricotta cheese, half of the mozzarella, grated Parmesan, lemon zest, and lemon juice. Mix well until smooth.

          Combine everything: Add the cooked pasta and sautéed vegetables to the cheese mixture. Gently stir until everything is well coated.

            Assemble the bake: Transfer the pasta mixture to a greased 9x13 inch baking dish. Top with the remaining mozzarella cheese, ensuring even coverage.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the cheese is bubbly and golden brown.
