Ingredients

1 lb (450g) beef sirloin or flank steak

2 ripe mangoes, peeled and diced

4 cups mixed greens (spinach, arugula, and lettuce)

1 red bell pepper, thinly sliced

1 small cucumber, thinly sliced

1/2 red onion, thinly sliced

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/4 cup peanuts or cashews, chopped (optional)

Juice of 2 limes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 teaspoon fresh ginger, grated

Salt and pepper to taste

Instructions

Marinate the Beef: In a bowl, mix the soy sauce, honey, lime juice, grated ginger, salt, and pepper. Add the beef, ensuring it is well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.

Cook the Beef: Heat a grill pan or skillet over medium-high heat. Remove the beef from the marinade and cook for about 4-5 minutes on each side, or until it reaches your desired doneness. Remove from heat and let it rest for 5 minutes before slicing it thinly against the grain.

Prepare the Salad Base: In a large mixing bowl, combine the mixed greens, diced mangoes, sliced bell pepper, cucumber, red onion, and avocado. Toss gently to combine.

Make the Dressing: In a small bowl, whisk together the olive oil, the remaining lime juice, salt, and pepper. Adjust the dressing to your taste.

Assemble the Salad Bowl: Place a generous portion of the salad base in each serving bowl. Top with the sliced beef, and sprinkle with fresh cilantro and chopped nuts, if using. Drizzle the dressing over the top.

Serve & Enjoy: Serve the salad immediately while the beef is still warm, or refrigerate for a refreshing cold meal later. Enjoy your Tropical Tango Mango & Beef Salad Bowl!
