2 cups cooked chicken breast, shredded

1 large ripe mango, diced

2 cups mixed salad greens (e.g., arugula, spinach, romaine)

½ red bell pepper, thinly sliced

½ cucumber, peeled and diced

¼ red onion, thinly sliced

1 avocado, diced

½ cup cherry tomatoes, halved

¼ cup fresh cilantro, chopped

¼ cup feta cheese, crumbled (optional)

½ cup roasted cashews or almonds, chopped

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon honey (optional for sweetness)

Prep the Chicken: If using leftover chicken, shred it into bite-sized pieces. If cooking fresh, grill or poach the chicken breast until fully cooked, then let it cool and shred.

    Prepare the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until well combined.
