Mango Glazed Tofu

14 oz firm tofu, pressed and cut into ½-inch cubes

1 ripe mango, peeled and diced

3 tbsp soy sauce

2 tbsp maple syrup or agave nectar

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tbsp cornstarch (for coating)

2 tbsp vegetable oil (for frying)

Salt and pepper to taste

Fresh cilantro, for garnish

Sesame seeds, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Mango Glaze: In a blender, combine the diced mango, soy sauce, maple syrup, rice vinegar, sesame oil, garlic, and ginger. Blend until smooth and creamy. Set aside.

    Coat the Tofu: Place the cubed tofu in a bowl and sprinkle with cornstarch, salt, and pepper. Gently toss to coat every piece. This helps the tofu achieve a nice crispy texture when fried.

      Cook the Tofu: Heat vegetable oil in a large non-stick skillet over medium-high heat. Once hot, add the coated tofu cubes in a single layer. Cook for about 4-5 minutes on each side, or until golden brown and crispy. Remove the tofu from the skillet and set aside.

        Reduce the Glaze: In the same skillet, lower the heat to medium and pour the mango glaze into the pan. Bring it to a simmer for about 3-4 minutes, allowing it to thicken slightly.

          Glaze the Tofu: Once the glaze has thickened, add the crispy tofu back into the skillet. Gently toss the tofu in the mango glaze until every piece is well-coated. Cook for an additional 2-3 minutes to allow the flavors to meld.

            Serve: Transfer the glazed tofu to a serving platter. Garnish with fresh cilantro and sesame seeds. Serve immediately with lime wedges on the side.
