4 bone-in, skin-on chicken thighs

2 medium sweet potatoes, peeled and diced into 1-inch cubes

1/2 cup pure maple syrup

3 tablespoons olive oil

2 tablespoons Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven:

    Preheat your oven to 400°F (200°C).

      Prepare the Marinade:

        In a medium bowl, whisk together the maple syrup, olive oil, Dijon mustard, garlic powder, onion powder, smoked paprika, thyme, salt, and pepper until well combined.

          Marinate the Chicken:

            Place the chicken thighs in a large resealable plastic bag or a bowl and pour half of the marinade over them. Seal the bag or cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld (you can marinate it longer for more flavor).

              Prepare the Sweet Potatoes:

                In a large mixing bowl, add the diced sweet potatoes and drizzle with the remaining marinade. Toss to coat the sweet potatoes evenly.

                  Arrange in Baking Dish:

                    Spread the marinated sweet potatoes evenly in a large baking dish. Remove the chicken from the marinade and place it skin-side up on top of the sweet potatoes.

                      Bake the Dish:

                        Place the baking dish in the preheated oven and bake for 40-45 minutes. The chicken should reach an internal temperature of 165°F (74°C), and the sweet potatoes should be tender.

                          Caramelize the Glaze:
