Ingredients

1 lb Brussels sprouts, trimmed and halved

2 tablespoons olive oil

1/4 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup pure maple syrup

1 tablespoon balsamic vinegar

1 tablespoon Dijon mustard

1/4 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

1/4 cup pecans, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Brussels Sprouts: In a large mixing bowl, combine the trimmed and halved Brussels sprouts with olive oil, sea salt, and black pepper. Toss until the sprouts are well coated.

Roast: Spread the sprouts evenly on the prepared baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and tender, stirring halfway through for even cooking.

Make the Maple Glaze: While the Brussels sprouts are roasting, prepare the glaze. In a small saucepan over medium heat, combine the maple syrup, balsamic vinegar, Dijon mustard, garlic powder, and red pepper flakes. Stir well and simmer for about 3-4 minutes until slightly thickened. Remove from heat.

Glaze the Brussels Sprouts: Once the Brussels sprouts are done roasting, remove them from the oven. Drizzle the maple glaze over the hot sprouts and toss to coat them evenly.

Final Roast: Return the glazed Brussels sprouts to the oven and roast for an additional 5 minutes, allowing the glaze to caramelize slightly.

Serve: Remove from the oven and transfer to a serving dish. Garnish with chopped pecans and fresh parsley for added flavor and crunch. Enjoy warm!
