Mediterranean Chicken Pita with Tzatziki Sauce

For the Chicken:

2 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

Salt and black pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and excess water squeezed out

1 clove garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon olive oil

Juice of 1/2 lemon

Salt and pepper to taste

For the Assembly:

4 whole-wheat pita breads

1 cup chopped Romaine lettuce

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

Fresh parsley for garnish (optional)

Instructions
 

Marinate the Chicken:

    - In a bowl, whisk together olive oil, oregano, smoked paprika, garlic powder, salt, and pepper. Add chicken breasts, ensuring they are well-coated. Cover and let marinate for at least 30 minutes (or up to 2 hours in the fridge).

      Prepare the Tzatziki Sauce:

        - In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, olive oil, and lemon juice. Mix well and season with salt and pepper to taste. Refrigerate for at least 20 minutes to allow flavors to meld.

          Grill the Chicken:

            - Preheat a grill or grill pan over medium-high heat. Grill the marinated chicken for about 6-7 minutes per side, or until cooked through and internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes before slicing.

              Assemble the Pitas:

                - Warm the whole wheat pita breads in a dry skillet over medium heat for about 1 minute per side or in a microwave for 10-15 seconds.

                  - Slice the grilled chicken into strips. In each pita, layer lettuce, grilled chicken, cherry tomatoes, red onion, feta cheese, and a generous spoonful of tzatziki sauce.

                    Serve:
