Mexican Street Corn Salad

4 cups of fresh corn kernels (about 6 ears of corn, grilled or boiled)

1 red bell pepper, finely diced

1 jalapeño, finely chopped (adjust to taste)

1/2 cup red onion, finely diced

1/3 cup fresh cilantro, chopped

1 cup cherry tomatoes, halved

1/2 cup crumbled queso fresco or feta cheese

1/4 cup mayonnaise

1/4 cup sour cream or Greek yogurt

1 lime, juiced (about 2 tablespoons)

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and black pepper, to taste

Prepare the Corn: If using fresh corn, grill the corn on medium-high heat until charred and cooked through, about 8-10 minutes. You can also boil the corn for 5-7 minutes until tender. Once cooked, allow it to cool, then cut the kernels off the cob into a large mixing bowl.

    Mix the Salad Ingredients: Add the diced red bell pepper, jalapeño, red onion, cherry tomatoes, and chopped cilantro to the bowl with the corn. Gently toss to combine all the veggies.

      Make the Dressing: In a small bowl, whisk together the mayonnaise, sour cream (or Greek yogurt), lime juice, chili powder, garlic powder, salt, and black pepper until smooth and well-blended.

        Combine the Dressing and Salad: Pour the dressing over the corn and vegetable mixture. Carefully fold everything together until the salad is evenly coated in the dressing.
