Ingredients

2 cups cooked shredded chicken

1 cup BBQ sauce (your favorite brand or homemade)

1 cup shredded cheddar cheese

1/2 cup diced red onion

1/4 cup chopped fresh cilantro (optional)

12 small flour tortillas (6-inch size)

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Sour cream (for serving)

Sliced jalapeños (for garnish, optional)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C).

Mix Chicken and BBQ Sauce: In a large mixing bowl, combine the shredded chicken with the BBQ sauce. Stir until the chicken is coated evenly. Season with garlic powder, salt, and pepper to taste.

Prepare Tortillas: Lightly brush both sides of the tortillas with olive oil. This will help them crisp up in the oven. You can also use cooking spray if you prefer.

Assemble Tortilla Bites: Place a small amount (about 2 tablespoons) of the BBQ chicken mixture in the center of each tortilla. Top with a sprinkle of shredded cheddar cheese, diced red onion, and a few cilantro leaves if using.

Fold Tortillas: Fold the tortillas over the filling, creating a mini taco shape. You can secure them with a toothpick if needed.

Bake: Line a baking sheet with parchment paper and place the tortilla bites on it. Bake in the preheated oven for 10-15 minutes or until the tortillas are golden brown and the cheese has melted.

Serve: Remove from the oven and let cool slightly. Serve warm with a dollop of sour cream and garnish with sliced jalapeños if you like some heat!
