6 large eggs

1/2 cup milk

1 cup cooked and crumbled breakfast sausage (or bacon/vegetarian alternative)

1/2 cup shredded cheddar cheese

1/4 cup diced bell peppers (any color)

1/4 cup diced onions

1/4 tsp garlic powder

1/4 tsp onion powder

Salt and pepper to taste

8 small flour tortillas (or corn tortillas for a gluten-free option)

Fresh cilantro or green onions for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or oil.

    Prepare the Tortillas: Using a round cookie cutter or the rim of a glass, cut the tortillas into smaller rounds that fit within the cups of the muffin tin. You’ll need two rounds per cup.

      Form the Tortilla Cups: Gently press one round of tortilla into each muffin tin cup. This will act as the base for your burrito cups. If needed, you can use another round to form the sides.

        Make the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.

          Add Fillings: Fold in the cooked sausage, shredded cheddar cheese, diced bell peppers, and onions into the egg mixture.

            Fill the Cups: Carefully pour the egg mixture into each tortilla-lined muffin cup, filling them about 3/4 full to allow for rising.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the eggs are fully set and the tops are lightly golden.

                Cool and Serve: Allow the burrito cups to cool for 5 minutes before gently running a butter knife around the edges to help release them from the muffin tin. Carefully remove them and place on a serving platter.

                  Garnish: If desired, sprinkle with fresh cilantro or chopped green onions before serving.
