2 cups frozen tater tots

4 large eggs

1/2 cup cooked breakfast sausage, crumbled

1/2 cup shredded cheddar cheese

1/4 cup diced bell peppers (red and green for color)

1/4 cup sliced green onions

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil or butter for cooking

Optional: sliced avocado or salsa for serving

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Bake the Tater Tots: Spread the frozen tater tots evenly on the baking sheet. Bake in the preheated oven for 20-25 minutes, turning halfway through until they are golden and crispy.

      Prepare the Egg Mixture: While the tater tots are baking, crack the eggs into a mixing bowl. Add in the crumbled breakfast sausage, diced bell peppers, salt, and black pepper. Whisk until well combined.

        Cook the Eggs: In a skillet, heat the olive oil or butter over medium heat. Pour the egg mixture into the skillet and gently scramble until the eggs are cooked through and fluffy, about 5-7 minutes. Remove from heat.

          Assemble the Stacks: Once the tater tots are done baking, remove them from the oven. On a serving plate, create stacks starting with a layer of tater tots.
