Ingredients

1 cup elbow macaroni

2 cups broccoli florets, steamed and chopped

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1/2 cup milk

1 large egg

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons melted butter (for topping)

Cooking spray (for greasing the cupcake tin)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with cooking spray.

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Prepare the Cheese Mixture: In a large mixing bowl, combine the steamed and chopped broccoli, cooked macaroni, grated cheddar cheese, softened cream cheese, milk, and egg. Stir vigorously until well combined.

Season the Mixture: Add garlic powder, onion powder, salt, and pepper to the mixture. Mix until all ingredients are evenly incorporated.

Fill the Muffin Tin: Scoop the macaroni and broccoli mixture into the greased muffin cups, filling each cup about three-quarters full.

Make the Topping: In a small bowl, mix the breadcrumbs with melted butter until the breadcrumbs are evenly coated. Sprinkle a tablespoon of the breadcrumb mixture on top of each muffin cup.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the mixture is set.

Cool: Remove the muffin tin from the oven and let the cupcakes cool for about 10 minutes before gently removing them with a spoon.

Serve: Enjoy your delicious Mini Broccoli Mac Cupcakes warm, or store them in an airtight container in the refrigerator for up to 3 days.
