1 cup cooked chicken, shredded or diced

1 cup shredded cheddar cheese

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup cold butter, cubed

3/4 cup milk

1/4 cup fresh chives, chopped (optional)

1 tablespoon olive oil

1 teaspoon garlic powder

1/2 teaspoon paprika

1/4 teaspoon cayenne pepper (optional, for spice)

Instructions
 

Preheat the Oven:

    Preheat your oven to 425°F (220°C) and place a cast-iron skillet or an oven-safe skillet on the stove over medium heat.

      Prepare the Dry Mixture:

        In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, garlic powder, paprika, and cayenne pepper.

          Cut in the Butter:

            Add the cubed cold butter into the flour mixture. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.

              Mix in Wet Ingredients:

                Pour the milk into the flour mixture and stir until just combined. Be careful not to overmix! Fold in the shredded chicken, cheddar cheese, and chopped chives (if using).

                  Form and Place Biscuits:

                    On a floured surface, turn out the biscuit dough. Gently knead it a couple of times until it holds together. Pat it down to about 1 inch thick, and use a biscuit cutter or a knife to cut out mini biscuits. You should yield about 10-12 biscuits.

                      Sauté Chicken in Skillet:

                        In the preheated skillet, add olive oil. If desired, sauté any additional chicken or leftover rotisserie chicken for a couple of minutes until warmed through.

                          Add Biscuits to Skillet:

                            Place the mini biscuits on top of the chicken in the skillet, slightly overlapping them.

                              Bake in Oven:

                                Transfer the skillet to the preheated oven and bake for 12-15 minutes or until the biscuits are golden brown and cooked through.

                                  Serve:

                                    Once baked, remove the skillet from the oven. Let it cool for a few minutes, then serve piping hot, garnished with extra chives or cheese if desired.
