Ingredients

1 can (16.3 oz) refrigerated biscuits

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1 cup cooked ground beef or Italian sausage (drained)

1 cup marinara sauce

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional for heat)

1/4 cup grated Parmesan cheese

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or line with muffin liners for easier removal.

Prepare the Biscuits: Open the can of refrigerated biscuits and separate them. Flatten each biscuit slightly with your hands or a rolling pin to create a larger base.

Line the Muffin Tin: Place each flattened biscuit into the bottom and up the sides of each muffin cup, creating a small bowl for the filling. Make sure there's enough dough overlapping to hold the fillings.

Prepare the Filling: In a bowl, mix the cooked ground beef or sausage with marinara sauce, ricotta cheese, mozzarella cheese, dried oregano, garlic powder, and crushed red pepper flakes if using. Stir well until combined.

Fill the Muffins: Spoon a generous amount of the cheese and meat mixture into each biscuit-lined muffin cup, filling them almost to the top.

Top with Parmesan: Sprinkle grated Parmesan cheese evenly over the top of each filled muffin cup for added flavor.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the biscuits are golden brown and the cheese is bubbling.

Cool and Serve: Allow the mini lasagna muffins to cool for about 5 minutes in the pan. Use a butter knife to carefully loosen the edges before gently removing them from the muffin tin. Garnish with fresh basil leaves if desired.

Enjoy: Serve warm as a delightful appetizer, lunch, or snack!
