For the Meatballs:

1 pound ground beef (or turkey)

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup cold buttermilk

For Assembly:

1 cup marinara sauce (plus extra for serving)

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Instructions
 

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, oregano, basil, salt, black pepper, and red pepper flakes.

      - Mix with your hands or a spoon until just combined. Avoid overmixing.

        - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

          - Form the meat mixture into small meatballs, about 1 inch in diameter, and place them on the prepared baking sheet.

            - Bake for 15-20 minutes, or until fully cooked through (internal temperature should reach 160°F/70°C).

              Make the Biscuits:

                - In a large bowl, mix the flour, baking powder, and salt.

                  - Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

                    - Pour in the cold buttermilk and stir until just combined. Do not overmix.

                      - On a floured surface, gently knead the dough a few times and roll out to a thickness of about 1 inch.

                        - Use a round biscuit cutter (or a glass) to cut out circles. Then, use a smaller cutter (or a shot glass) to cut out the center of each circle, making a ring shape. Place the biscuit rings on a baking sheet.

                          Assemble the Subs:

                            - Once the meatballs are cooked, place a meatball inside each biscuit ring.

                              - Spoon marinara sauce over the meatballs and then sprinkle shredded mozzarella cheese on top.

                                - Return the assembled biscuit rings to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                                  Serve:
