1 cup chickpea flour (besan)

1/2 cup water

1 teaspoon baking powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1 tablespoon chopped fresh cilantro or parsley (optional)

For the Spicy Chickpea Filling:

1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon crushed red pepper flakes (optional)

Juice of 1 lime

For the Avocado Cream Sauce:

1 ripe avocado

2 tablespoons Greek yogurt (or plant-based yogurt)

Juice of 1 lime

Salt and pepper to taste

For Assembly:

Sliced cucumbers, radishes, or any fresh veggies

Microgreens or salad greens

Instructions
 

Prepare the Waffle Batter:

    - In a mixing bowl, combine chickpea flour, baking powder, smoked paprika, cayenne pepper, garlic powder, and salt. Mix well.

      - Gradually stir in water until smooth. Add chopped cilantro or parsley if using. Let the mixture sit for 10-15 minutes.

        Make the Spicy Chickpea Filling:

          - In a bowl, mash the chickpeas using a fork or potato masher until chunky.

            - Stir in olive oil, cumin, chili powder, salt, red pepper flakes (if using), and lime juice. Mix until well combined and set aside.

              Prepare the Avocado Cream Sauce:

                - In a blender or food processor, combine the avocado, Greek yogurt, lime juice, salt, and pepper. Blend until smooth and creamy.

                  Cook the Waffles:

                    - Preheat your waffle maker according to the manufacturer's instructions. Spray lightly with cooking spray if needed.

                      - Pour a small scoop of the chickpea batter onto the waffle maker and cook until golden brown and crispy, about 3-5 minutes. Repeat until all batter is used.

                        Assemble the Sliders:
