2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 cup BBQ sauce (your favorite brand)

1 ½ cups shredded mozzarella cheese

1 cup shredded cheddar cheese

4 large flour tortillas

1 tablespoon olive oil (for cooking)

½ cup sliced green onions (optional, for garnish)

½ cup sour cream (optional, for serving)

Instructions
 

In a medium bowl, combine the shredded chicken and BBQ sauce. Mix well until the chicken is fully coated with the BBQ sauce.

    Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

      Place one tortilla in the skillet and sprinkle a layer of both the mozzarella and cheddar cheese on one half of the tortilla.

        Spoon an even layer of the BBQ chicken mixture over the cheese and fold the other half of the tortilla over, pressing gently to seal.

          Cook for 3-4 minutes on one side until the bottom is golden and the cheese starts to melt. Carefully flip the quesadilla and cook for an additional 3-4 minutes until the other side is golden and crispy.

            Remove from the skillet and let it cool slightly before cutting into wedges. Repeat with the remaining tortillas and filling.
