Mushroom and Chicken Quinoa Stir-Fry

1 cup quinoa

2 cups chicken broth

1 lb chicken breast, diced

1 cup cremini mushrooms, sliced

1 red bell pepper, diced

1 cup snap peas, trimmed

3 green onions, sliced

3 cloves garlic, minced

2 tbsp soy sauce (low sodium)

1 tbsp oyster sauce (optional)

1 tsp sesame oil

2 tbsp olive oil

Salt and pepper to taste

Sesame seeds for garnish

Rinse and Cook Quinoa: Start by rinsing the quinoa under cold water. In a medium saucepan, combine rinsed quinoa and chicken broth, then bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Fluff with a fork and set aside.

    Sauté Chicken: In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken breast, season with salt and pepper, and cook until browned and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Cook Veggies: In the same skillet, add the remaining tablespoon of olive oil. Add sliced garlic and sauté for about 30 seconds until fragrant. Then, add the mushrooms, bell pepper, and snap peas. Cook for 4-5 minutes until veggies are tender but still crisp.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked quinoa, soy sauce, oyster sauce (if using), and sesame oil. Stir-fry everything together on high heat for another 2-3 minutes, ensuring all ingredients are well combined.
